SOUTHERLY COURSE

Recipes & Stories from Close to Home

By Martha Hall Foose

In her highly anticipated follow-up to the James Beard Award–winning Screen Doors and Sweet Tea cookbook, beloved author Martha Hall Foose continues her conversation with readers, sharing recipes and stories from the South in A SOUTHERLY COURSE: Recipes & Stories from Close to Home (Clarkson Potter; on sale April 12, 2011).

A unique storyteller with traces of Eudora Welty and Willy Morris in her style, as well as a talented home cook and chef, Martha won legions of devoted fans with her first cookbook—and charmed the media. Everyone responded to her unique and passionately genuine voice, and to her friend-in-the-kitchen tone.

A SOUTHERLY COURSE picks up where Screen Doors and Sweet Tea leaves off, charting an even more intimate journey in Martha’s life and reflecting how foodways in the South have continued to evolve over time.

Born and bred in the great state of Mississippi, Martha creates recipes packed with the very best of Southern flavors, calling on the greatest of local ingredients in often unexpected ways. In A SOUTHERLY COURSE, readers will find recipes for tried-and-true classics, such as Skillet Fried Corn and Chocolate Chiffon Pie, as well as surprising and new dishes, such as Peanut Chicken and Sweet Pickle Braised Pork Shoulder. No matter the inspiration, all of the recipes have one thing in common: Each comes with a fascinating story. Few can spin a yarn with such wit and beguiling charm as Martha. Try Martha’s Fig Pecan Fondue, and lament with her the pulling down of a row of purple figs she’d known since her childhood, the trees already bursting with juicy, ripe fruit. Warmly amusing and more poignant with the turn of each page, Martha’s tales are always authentic, leaving enamored Southerners and would-be Southerners longing for more.

MARTHA HALL FOOSE was born and raised in the Mississippi Delta. She attended the famed pastry school École Lenôtre in France before returning to Mississippi, where she opened Bottletree Bakery—a Southern institution in Oxford—and later, with her husband, Mockingbird Bakery in Greenwood, where she was also executive chef of the Viking Cooking School. Recently, Martha was a food stylist for the movie The Help, based on the bestselling novel of the same name by Kathryn Stockett. Martha’s first cookbook, Screen Doors and Sweet Tea, won a James Beard Award. She makes her home in Tchula, Mississippi, on her family farm with her husband and their son.
