After emigrating from Asia in the 1970s, Kian Lam Kho sorely missed the abundance of flavors from his native cuisine. Disappointed with the substandard Cantonese fare he found in the United States and unable to find a good Chinese cookbook, he wrote home to his family for instructions on how to prepare authentic recipes. In Phoenix Claws and Jade Trees: Essential Techniques of Authentic Chinese Cooking (Clarkson Potter/Publishers; on sale September 29, 2015; $35.00; Hardcover) this culinary instructor, restaurant consultant, and blogger shares 158 recipes for the dishes he has perfected over the years, along with 240 photographs, including practical step-by-step technique photos and inspiring beauty shots.

Unlike other Chinese cookbooks, which tend to divvy up their recipes either by region or course, Kho’s unique approach to teaching will help truly demystify Chinese cooking for the home cook with building-block techniques: once you know how to dry stir-fry chicken, you can then dry stir-fry tofu, shrimp, and any number of ingredients, and you build your skill set from there. Kho outlines the differences among various methods (such as pan-frying, oil steeping, and yin-yang frying) and instructs which one is best for which ingredient and final result.
